Grandmother.

Every kitchen in the world has one. She is the one who has been cooking the dish since before you were born, and her mother was cooking it before her, and her mother before that. She does not follow a recipe. The recipe lives in her hands.
The recipes in these journals are written to her standard.
We have been to forty-two countries. We have stayed for months in most of them. We have stood in kitchens on four continents and watched women cook dishes they have been cooking their whole lives, in languages we did not always speak, with techniques nobody wrote down because nobody needed to. We cannot eat a dish without taking it apart in our heads. We cannot pass an open kitchen door without stopping.
That is where these recipes begin, but it is not where they end. For each dish, we went back and did the work again. We read through a dozen versions, sometimes more, and threw out the ones a home cook in that country would not recognize. We watched dozens of videos, some in languages we did not understand a word of, and we watched them until we did. We tracked down what the local flour is called, what fat she actually uses, what she never substitutes, what she says is wrong when her granddaughter tries a shortcut. We found the ingredient that is always there, and the step that is never skipped, and we wrote the recipe around those.
Every recipe here is original to us, written line by line. What is not original is the tradition behind it, and the tradition is what we protect. We wrote these recipes so that she would read one, nod, and call it hers.
What a food blog calls authentic and what a grandmother calls hers are not always the same thing. When the two disagreed, we sided with her.
We invent nothing. We do not simplify. We do not substitute for convenience. We do not reach for a lighter version, a weeknight version, or a modern twist. If we could not write the dish in a way she would cook it, we did not write it.
If she would not recognize the dish on the page, it is not in these journals.
